I love soup in the winter, don't you? I actually love soup all year round. In fact, when given a choice I will ALWAYS choose soup over a salad. I do have a couple of favorite soups that I love to make. I keep losing these recipes and have had a couple ask so I'm posting them here where I know I can always find them and hopefully you can as well!
Taco soup:
This recipe is really just a grab bag of what I have in my cupboard. Here is what I usually include: 1lb browned and drained ground beef, 3 cans kidney beans drained, 1 can black beans drained, 2 cans pinto beans drained, 2 cans corn undrained, 2 cans diced stewed italian style tomatoes undrained, 1 can diced green chilies (if you want a little kick), 2 packages taco seasoning, 1 package ranch dressing mix. Still in crock pot and heat thoroughly. This soup can sit in the crockpot all day if needed! Serve with chips, sour cream, cheese and whatever else makes you go "oh yeah!"
White chicken chili:
Another dump and go recipe but I love it! Here is what you do: 1 lb chicken diced and browned, 3 cans Great Northern White beans drained, 1 can chicken broth, 1 can cream of chicken soup, 1.5 cups water, 1 can diced green chilis, 2 can Mexi corn drained, salt and pepper to taste. Put in the crockpot and simmer for as long as you need. Just before serving, stir in .5 cup canned milk (I usually just get a 5oz can) and 1.5 cups sour cream. Heat thoroughly. Serve with chips or whatever else your little heart desires.
